These are very, very good. Splurge on a good syrup like Butter Pecan!
Yeast Waffles
1 pkt yeast
1/4 c warm water
2 eggs, slightly beaten
1 t salt
1 1/2 T sugar
1 t vanilla
1/2 c oil
12 oz can evaporated milk, room temperature
1/2 c warm milk
3 1/4 c flour
Mix the yeast and warm water together in a small bowl and set aside.
In a large bowl (dough rises quite a bit), mix eggs, salt, sugar, vanilla and oil. Mix well. Add the warm milks and yeast mixture. Mix. Stir the flour in a cup at a time. Mix well.
Cover bowl with plastic wrap and refrigerate overnight. You may stir the batter periodically but do not stir right before using it. Makes a large bowl of batter. Keeps well when refrigerated for up to a week.
